Science is the study of the nature and behavior of natural things and the knowledge that we obtain about them. This class will give students a hands-on opportunity to learn about the life all around them. We will start with learning some basic chemistry in order to understand simple cell structure and from there we will expand to more complex structures and dissections. Students will also learn to identify and safely use dissection tools, lab equipment, microscopes, etc. Some examples of what we will be dissecting: flowers, sharks, worms, frogs, internal organs (kidneys, heart, etc), eyes, and more.

Class structure will be on an alternating schedule: Class instruction one week and dissection the following week, repeat. Dissections will be in a group or pairs, and students who wish to only observe will not be forced to participate and can opt to be a spectator only.

Homesteading & Pioneer Cooking 6-12

$350  (85 minutes)

As part of this journey, we will learn using a hands-on approach skills of early pioneers that are still useful today, such as basic farming and toxic plant identification, food preservation (canning and fermenting), food staples making (such as butter and meat stocks), sewing, farm animal care, soap making and more!

In today's fast-paced world, processed and convenience foods have become all too common and traditions from the older generations seem to get lost along the way. The cooking part of this class will teach students all about those long forgotten skills using whole foods. Topics include making jam, canning, preservation through fermentation (pickles), ferments for gut health (kombucha, keifer), making your own staples, bone broth, gravy, how to care for and use sourdough starter, casing sausage, home remedies such as elderberry syrup and more!

Please note that due to the nature of this class, there may be some weeks where students will be taking home components to continue to care for at home such as sourdough starter and ferments. Proper home care instructions will be provided to students in class and emailed to parents.
